The famous triangular cut of this item gives it the name "Tri Tip". It is boneless and fairly tender steak from the sirloin portion of the animal.
Tri tip is best prepared roasted or grilled and then thinly sliced across the grain.
As a California cut, this is Stephen's favorite cut.
