Marrow bones can be used to make homemade beef broths or stocks, but they also make an amazing appetizer found in many high-end steakhouses. You can also use them to create marrow butter, where you remove the marrow from the bone, and melt it on top of your steaks for an exceptionally rich and flavor experience.
To prepare a marrow bone appetizer (our favorite!), simply spread the bones out (cut side up) on a baking sheet lined with aluminum foil. Sprinkle with salt and pepper, and roast in the oven at 450 degrees until the marrow is sizzling and hot in the center--about 15-25 minutes.
To serve, use a small utensil to carefully remove the marrow from the bone onto a crostini or sliced baguette. Top with roasted grape tomatoes and capers for a rich flavor profile.
